Description

Pre-fermentation cold soak of five days below 5°C, followed by a long-maceration fermentation (more than 18 days) at controlled temperature.

Aged 24 months in new barrels (70% French oak, 30% American oak) and more than 36 months in bottle in the underground cellar. Deep colour, aromas of spice, coffee and fig, balanced, long and very full-bodied palate.
